The north-eastern Italian province of Friuli-Venezia Giulia is well known for Cotechino, a richly seasoned pork sausage that is popular across Italy when served on top of a bed of gently braised brown lentils - particularly on New Year’s Eve, when it is believed to bring good luck in the year to come.
