Sponge Cake
250 mlUnsweetened Almond Breeze Unsweetened
1 teaspoonApple cider vinegar
120 gWhite sugar
45 gBrown sugar
80 gRice bran oil
1 ½ teaspoon Vanilla extract
150 gAll-purpose flour
40 gCocoa powder
¾ teaspoonBaking soda
½ teaspoonBaking powder
¼ teaspoonSalt
Chocolate Ganache
150 mlUnsweetened Almond Breeze
290 gChocolate chips
Instructions
Preheat the oven to 180 ˚C and grease two cake tins and line with parchment paper. Mix together in a bowl the Unsweetened Almond Breeze®; apple cider vinegar; white sugar; brown sugar; rice bran oil; and vanilla extract. Into the bowl, sift the flour; cocoa powder; baking soda; baking powder; and salt. Fold in the ingredients gently and divide the mixture between the two tins. Bake in the oven for 25 minutes. Remove sponges from the tins and let them cool down on a wire rack. Meanwhile, prepare the chocolate ganache by heating the Unsweetened Almond Breeze® in a pan and adding in the chocolate chips until they melt. Let the ganache cool a little and use as a filling between the two sponges and spread over the top of the cake too.
